
These cupcakes are a bit time consuming, but your final result of a colorful cupcake will look amazing. Since these cupcakes take more time to make, I usually cheat by using a boxed cake mix instead of making home-made batter.
Cupcake
Ingredients:
1 box White cake and necessary ingredients the box requires. Note: you can use yellow cake, but the colors are more vivid when you use white cake.
5 different shades of food color. The box of dyes usually has four colors, but you can mix colors to make your own color.
Directions:
Preheat oven to 350° Fahrenheit
Mix cake mix and the ingredients it requires in a large bowl.
Separate batter into smaller bowls, one for each color that you want in your cupcakes. I used five bowls for red, yellow, green, blue, and pink.
Put the cupcake papers in the cupcake tin. I used foil papers so that you couldn’t see the layers of color until the end.
Start with the color you want at the bottom of the cupcake. In my case, I chose blue. Continue layering up until you get to the color you want on top.
Bake at 350° Fahrenheit for 15 to 20 minutes, until a toothpick inserted into the middle comes out clean.
Buttercream frosting
Ingredients:
6 cups confectioners’ sugar
2 cups butter
2 tsp vanilla extract
2-4 tbsp whipping cream
Directions:
In a standing mixer fitted with a whisk, mix together sugar and butter. Mix on low speed until well blended and then increase speed to medium and beat for another three minutes.
Add vanilla and cream and continue to beat on medium speed for one minute more, adding more cream if needed for spreading consistency.
Pipe frosting onto top of cupcakes.
