Happy October everyone!  Or should I say Guactober?

This month is all about the guac.  Guacamole is the snack everyone seems to be craving lately.  With October comes Sunday afternoon football games, which then leads to the fattening, junky snacks that everyone loves while watching the Ravens defend their Super Bowl title.

Here’s a way to combat all your junk food and sugary sweet cravings: A delicious and healthy guacamole recipe that will satisfy the hungry football fans at all of your Sunday afternoon get-togethers.

Here’s what you’ll need:

3 ripe avocados  – You can get them at your local grocery store or if you have too much time on your hands, grow them yourself. To determine if an avocado is ripe, gentle squeeze the fruit. If the fruit is still hard or has a dent afterwards, place the avocado back on the shelf.

1 can of Ro-tell seasoned tomatoes

1 teaspoon of lemon or lime juice

Directions:

1. Cut avocadoes and remove the seed also known as the pit.  Spoon the avocadoes out of their skin and put in a medium size bowl.

2. Drain the can of Ro-tell tomatoes and place in the same bowl.

3. Sprinkle with lemon juice and mix.

4. Serve with Blue Corn chips or vegetables and enjoy.
