These cupcakes are a bit time consuming, but your final result of a colorful cupcake will look amazing. Since these cupcakes take more time to make, I usually cheat by using a boxed cake mix instead of making home-made batter.
Cupcake
Ingredients:
1 box White cake and necessary ingredients the box requires. Note: you can use yellow cake, but the colors are more vivid when you use white cake.
5 different shades of food color. The box of dyes usually has four colors, but you can mix colors to make your own color.
Directions:
- Preheat oven to 350° Fahrenheit
- Mix cake mix and the ingredients it requires in a large bowl.
- Separate batter into smaller bowls, one for each color that you want in your cupcakes. I used five bowls for red, yellow, green, blue, and pink.
- Put the cupcake papers in the cupcake tin. I used foil papers so that you couldn’t see the layers of color until the end.
- Start with the color you want at the bottom of the cupcake. In my case, I chose blue. Continue layering up until you get to the color you want on top.
- Bake at 350° Fahrenheit for 15 to 20 minutes, until a toothpick inserted into the middle comes out clean.
Buttercream frosting
Ingredients:
6 cups confectioners’ sugar
2 cups butter
2 tsp vanilla extract
2-4 tbsp whipping cream
Directions:
- In a standing mixer fitted with a whisk, mix together sugar and butter. Mix on low speed until well blended and then increase speed to medium and beat for another three minutes.
- Add vanilla and cream and continue to beat on medium speed for one minute more, adding more cream if needed for spreading consistency.
- Pipe frosting onto top of cupcakes.
